I was curious if anyone has encountered this issue recording the ES520 with the line outs into an interface/DAW but the volume and gain are extremely low. If so, what steps would you recommend to correct this issue?

Read the manual about "recording".

There is probably some means of increasing "gain" when recording.

Try turning the master volume all the way up

“ MASTER VOLUME slider
This slider controls the master volume level of the instrument’s built-in speakers, LINE OUT, and headphones, if connected.”

What interface? Aside for the volume slider, does it have a gain switch for consumer/pro signal level?
