I don't know if it's the release sounds or the EQ that makes it sound like this but can you make a VST sound like this with the staccato notes and not a super clinical sound and organic sounding.

I don't know much about piano recording so please excuse my ignorance. I know digital pianos can't replace a live piano performance,but can they at least match a recording?

A masterful pianist on a grand piano will sound better than any VST out there on any setting, pretty much, imo. I've heard Garritan, Pianoteq and many of the others. I think that they can sound good but are somehow limited in the way they respond to touch. I can't say for sure why, but it's basically that they don't have the same versatility as an actual grand piano.

I find adding a low pass filter helps a bit to get that sound, maybe there's a plugin that can dirty the sound without actually making it muffled or less clear. Pianoteq is the furthest thing from this sound haha. Thanks

Yes, the higher frequencies are being emphasized more.

I think there's a lot of music that being played on a VST would be hard for me to tell apart from a recording of an acoustic. If you have the chance, I would recommend to record yourself on an acoustic and then compare with a recording of the same music using your digital. For me it's really hard to compare my own recordings to those of such a fantastic player and distinguish between the contributions of the player, the instrument, the tuning, the room and the recording. Checkout his video on a Casio without any VSTs (as far as I can tell):

the recording of this piano requires several very high quality microphones placed at the proper place, perfectly isolated, and a perfect mixed.
when you're in the room with this pianist, it sounds different depending of where you are, the room size / isolation and so on
so I don't really get the comparison here

about the Casio guy, I don't know how he recorded it but he rocks
