An example for the kind of thing I'm looking for would be Petit Trianon Suite, by Denes Agay. Another gem I could discover myself is Reinagle's op. 2 (24 short and easy pieces). (This repeats my post in the Adult Beginner's Forum; I'm sure a piano teacher has a lot to say on this.) Beginner, started in Summer 2006, self-taught

You may also want to check out Eugenie Rocherolle. She has quite a few challenging pieces for the intermediate students as well as having beginning studentpieces that sound more advanced than they really are.
