Tonight was rigatoni with Italian sausage and escarole in a white wine and cream sauce. The hot variety of the sausage makes this a nice and spicy. Served with breadsticks and the leftover wine from the sauce (I've made it with either pinot grigio or sauvignon blanc, but I really don't like to drink either).

Actually the smoker works on top of the stove indoors...snow, rain or shine...

Haven't decided for tonight. Last night was lamb stew served over rice, washed down with good beer.

On to cookbooks...The River Road series is good, and a must in any Bayou kitchen.

We stick more to farm or country type cooking, so I can't compete with JF or Penny, but we don't go hungry.

Okay, I'm returning this thread to its topic. Too good a topic to let go by the wayside.

I roasted the best chicken I've ever done last night. After rubbing the whole thing with salt, I then brushed butter over the breast and legs, then rubbed fresh minced rosemary, crushed garlic and a little salt under the skin of the breasts and legs - this is key - the herb mix was all rubbed under the skin so the flavors really infused the meat, and the skin with the butter, was browned and delicious.
