Right now I'm using Lime (and just clicking past the nag screens), but I would like to create a MIDI file. However, I can't find where to hear other instruments other than the standard midi piano in LIME, so I think I need another program. As I will be burning the program's folder to disk and using it at a library, I need something that doesn't require any admin access to install, and can be basically run straight from a disk, once I unzip it, for example.

I don't need a ton of features - just mainly a MIDI sequencer (printing sheet music would be a plus, too, but not required) that allows me to select various midi notes, and use piano roll and/or staff notation.

Here's a song I played (live, not pre-recorded MIDI file) on a Casio PX-555r, and recorded (via the headphone jack) onto an mp3 recorder. I'd like to create a MIDI of that song, for example (no, not DIRECTLY from the MP3 - I'd start over from scratch), and polish up the many glitches that are in the song.
Then, I would like to take the MIDI file on a memory card / disk / CD / whatever, and try playing it on a keyboard somewhere.

Music Creator 3 from Cakewalk is pretty cheap ($39 boxed, $29 download), and includes notation and audio recording.

Your requirement of running without a real install may be hard to meet. It might be easier to round up a cheap/free computer. Even an old one will run some of these just fine.

Also if you are brave enough to try linux there are many good ones on it (rosegarden, muse...), but i think it's perhaps not what you are asking for.
