Looking for a new upright piano. Went and played some at a local piano store. Really liked the Kawai K-500. Store is asking $8,900 for the new K-500. Another store has a 2015 K-500 that they said is in excellent condition. Single family owned it and there daughter didn’t play much. They were moving across country and had to sell it. They are asking $6,900. I’m going to go look at the used one tomorrow. How much is a used K500 worth?

That's an extremely good price for both the new and the used K-500, and both are below typical market values. If the manufacturer warranty applies (Kawai warranties in the US are 10 years and transferrable), I'd pick based on condition and preference, if you can afford both (and like these pianos best of all the possible choices).
