And why, in 2020, do serious pianists still have to use flimsy workarounds if there's even a tiny bit of rain?

You just need to use right kind of water.

Distilled water doesn't conduct electricity so it shouldn't be a big issue for a DP.

Of course any impurities from either the piano or the player might introduce ions into the water so everything needs to be kept clean including the inside of the DP.

I wouldn't try playing in rain of distilled water.

LOL, I love Gamazda videos.
Her cover of Sweet Child of Mine is one of my favorites.

Plus lately she has been using my favorite keyboard, or "slab", a term I just learned today...

Nope, no issues with it at all.
Took lessons from 1960 to 1969, stopped at age 16.
Started again in July 2020 at age 67. Lots more fun now!
