When you layer 2 voices, you can adjust the volume balance between the 2 voices.

Anyone know if it is possible to program that function to a pedal?

You can control it with the [PIANO] + C5 (1 step down); C#5(default); D5 (1 step up)
I don't think you can reassign the pedals to this function.
Tested it in my P121 and works.

I tried this on my P-125 and monitored the resulted MIDI messages in Pianoteq...
There are "Controller 7" messages for MIDI channel 1 and 2, the value seems to be the desired volume...

keep calm and play the piano :-)

I don't think I fully understand. What worked exactly? The function itself using the piano button and these specific keys?

Sorry, I (mis)understood your first sentence as a question.
Indeed, when we layer 2 voices, we can adjust the volume balance between the 2 voices, both through the key combinations or the smart pianist app.
However, I'm not aware of any feature in the piano that provides the capability of assigning a pedal to specific functions.
Smart Pianist app has an option to assign the middle and left pedals to page turning, but that is app-specific and not on the piano itself.
