Triple Mac mentioned that he has midi tool that intercepts the midi messages from his DP and adjusts the midi output based on values in an edited midi curve. The tool then passes on the adjusted midi to his virtual piano or DAW.

I have been hunting for a similar thing for macOS without success. If anyone know of such a tool/app system process for macOS I would like to know about it.

In the meantime I have worked out that I can select a touch setting with all sounds disabled on my MP11SE and even better I have been able to save it so that on power on the touch setting is loaded.

This is still not ideal, as you can only select one of 5 preconfigured touch setting curves, and it would be nice to shape the curve myself.

Also it might be nice to be able to have a touch curve specific for each virtual piano I have.

So I would still like to know if there is a tool for the Mac like the one 3M found for windows.

Which pianos do you use on the Mac? And, in particular, which platform?
I ask because many Kontakt-based instruments have a velocity curve tool.
And for those that don't you can use a simple KSP script to implement one.

If you use a DAW rather than Kontakt ... you have to wonder why DAWs don't all have a velocity curve tool.

The velocity curve program I use on Windows has the brilliantly inventive name "Velocity Curve".
It was an online freebie.

But IIRC it's not available anymore ... unless someone can dredge it from an archive somewhere.
I could post it online if anyone needs it.

But for KevinM ... it won't run on the Mac.

Main stage looks far more than my needs. Reading up about it and 90% of what is written feels like a foreign language to me. So to use it I am guessing will be a pretty steep learning curve.

I am not discounting it completely because there don’t seem like other choices.

You don't have to use software, there are also hardware solutions like this one:
http://midisolutions.com/prodvel.htm

This is about 135€/$

I'm using a DIY midi velocity mapper based on a Raspberry Pi4.

That looks interesting, thanks Georg.
