How would one play this? Would you hold the G or play it each time with the C? Or is that up to me/preference?

Play the first G louder(with the RH or both hands) and hold the pedal down for at least the first five eighth notes. Play the C and G with the left hand but starting with the second eighth play then much softer than the first G so one can hear the right hand melody.

Thank you! That's really helpful. I know so many of things that are basic for you (and others here) but new to me. I'm learning a lot about voicing which I never even knew about. Thanks for the help on that one.
