I realize it's not for everyone, but it's uber-cool to me! Hey, some classically trained pianists are transcribing rock / metal songs to the piano, why not the other way around?

But why not? Musicians have been arranging other musicians' music forever. Music should live, not just be a museum exposition.
I have nothing against arrangements. I have played many very satisfying ones and even made some myself. My question here related to the - to me - very harsh sound of this particular electric guitar against the original scoring. I guess one can only say that any vague resemblance to the original is pure coincidence so, why bother?

Hmmm. I always feel it adds something to a piece to hear it in a completely different context - such as this "harsh" version. It makes me notice things about the music I never saw or heard before, and in some cases makes me appreciate it more.
Obviously, some new versions are better executed than others!
An example from rock music in the "opposite direction" - a fast, angry rock song made into a ballad - is Tori Amos's hauntingly beautiful version of Nirvana's Smells Like Teen Spirit. I liked the song when it originally came out, but I'd never appreciated the harmonies until I heard it from Tori. I still like the original, but her version has added another dimension for me. Does that make sense?
Oh Sybille, Tori’s one of my favorites. The whole Strange Little Girl album is haunting. How about Don’t Like Monday’s? She has so many live performances available for download. I’d really like to catch her live one day.

Absolutely makes sense. Do you remember Underworld did a song called Born Slippy? I'm really not a fan of it, but a band called Barefoot did a cover of it, completely different and it's beautiful
