For those unsure about how well Chopin played, read ‘Chopin as seen through the eyes of his students’. There is a chapter with comments from composers, other pianists and reviews

Love Debussy’s music but I believe actually playing was not his strong suit, and over time he reduced the frequency of playing publically

Chopin all the way!!!!! But if I have to mention a few more: Bach, Purcell (I really need to hear how he plays his harpsichord suites and the ornamentations), Debussy

Godowsky. I heard from a piano teacher I worked with for a bit that Rachmaninoff, Godowsky, Hoffman, and (I think) Cortot would hang out and play piano for each other, and the other three agreed Godowsky was the best pianist out of them.

And just for historical interest I would also like to watch Chopin playing and probably Czerny or Tausig.

I would not spend my wish on seeing someone, whose performance is available on video.

It was Horowitz who was a friend of Rachmaninoff and was frequently hanging out with him.
I doubt that Cortot was involved, because unlike all the mentioned persons he was not an émigré from Russian Empire and he could not speak Russian, he didn't have much in common with the others.

Most definitely Chopin, just to hear him play a selection of his etudes, nocturnes and preludes.
Domenico Scarlatti. He has over 500 sonatas to choose from. An hours long listening session would be wonderful and enlightening (does he play them in pairs or not?)
Mozart: who wouldn't love to hear and see him play and conduct his piano concerti from the keyboard?
Fedrerico Busoni: to hear his Bach transcriptions and to hear his Beethoven and Schubert readings
Alexandre Siloti: Rachmaninoff's first cousin and a noted pianist/teacher in the early 20th century. Also known for his piano transcriptions.
