Manuel de Falla's "Seite canciones populares españolas" is a classic, as you can tell from the number of good recordings on YouTube. I like this live one -

Pianists likely know Granados' "The Maiden and the Nightingale" as part of his "Goyescas" suite. But he also set the melody to words (I think from his "Goyescas" opera). So I don't really know if this version is really originally for voice and piano or not.
