I'm a complete tech luddite, so perhaps you can clear things up for me.

My Macbook Air doesn't have enough space to install Ivory American Concert D. The website recommends installing it on an external hard drive or SSD. Since it only takes up 49 GB of memory, can't I just install it on a usb thumb drive, and stick it into the usb slot whenever I want to play? Or would that cause problems/latency/etc.?

And where would I need to install the Cantabile host, and vst plugin?

I have Ivory's sample library stored on a fast USB 3 thumb drive (so I don't have to install it everywhere) and it's working just fine.

Only the transfer and access speed matters. Not all external hard drives (that are connected via USB) have the same transfer speed. Similarly, not all USB thumb drives have the same transfer speed. Especially the cheap ones (or the ones you get as giveaways) are often quite slow.
But if you find a thumb drive that is large enough to hold the sample library and that has a transfer speed that is comparable to a good external USB hard drive or even a USB SSD, then there is no reason why you shouldn't be able to use it. (Most likely it will need to be a USB 3 thumb drive to get such a decent speed.)

If you have too little free space on your internal drive to carry a 49 GB piano, perhaps you ought to replace it with a bigger one. Drives are cheap ... and I'd hate to be within 49 GB of being "full".

Also, desktop 3.5" drives are generally cheaper than the laptop 2.5" drives. So you could buy a desktop drive (I just bought a 2 TB Seagate for $66) and put it in a USB 3.0 enclosure (I paid $25). For under $100 you'd have enough storage for your 49 GB piano ... and lots more.
