Let's say a keyboard midi controller performance has been captured and is stored in an SMF or MID file.

If that midi file is used by virtual piano software to produce a WAV or MP3, do the audio subsystem capabilities of the computer affect the quality of the resulting WAV or MP3 files, or does the translation of the midi file to the virtual piano "sounds, and then to the WAV or MP3 completely bypass the computer's audio subsystems?

It's not affected at all. The final rendering is a computation done by the CPU and would turn out the same no matter what computer it was made on. A faster computer will render it faster, that's all.

Yep, the soundcard in your computer makes no difference.
