Just started in Alfreds book 1, how long can I get by using my 61 key keyboard. I plan to get an 88 key piano, but Im undecided on if Im going acoustic or digital at this time.

Could I get through book 1 with 61 keys ?

I'm not exactly familiar with it, but I highly doubt there would be anything in a method book that required the use of keys below C2 or above C7. However, you should get a real piano pretty soon if you wish to become a pianist.

Yes you can do Alfred's Book 1 with your keyboard in the meantime.

You'll need the lowest note on that keyboard to play "The Entertainer" arrangement near the end of the book (C2 -- two octaves below middle C).

I started with a 61-key Yamaha NP11. I upgraded after nine months to an 88-key Casio PX150. I still rarely use the extra keys. The weighted keys, and a more of a piano-like action, make a significant difference in terms of responsiveness, control and potential for expression.

I understand that there are always circumstances as to why someone would want to learn piano on an instrument that is not a piano (either digital or acoustic), but I hope you know that it is not ideal and should be avoided if it can be.

Unfortunately, it's not just the range of notes that a 61-key will limit you with. The main problem is that the 61 keys are not weighted (to my knowledge, no 61-key keyboards are), and most likely will be slightly smaller keys as well. Are the keys velocity sensitive (when you depress the key faster, it's louder, slower and it's softer)? Many 61-keys are not.

You will encounter dynamics pretty much right away, so this will effect your playing. Also, you will encounter pedaling and so without a pedal that will be another adjustment.

Basically, the longer you spend on this keyboard, the harder the adjustment will be when you upgrade to a real piano (DP or AP). If you plan to get a digital or acoustic soon, it may be best to wait until you do.
