I would like some advice on how best to find, research, evaluate and select a firm to do a full restoration of a Lester piano that has been a member of the family for generations. Looking for artistry, craftsmanship, quality and care - hard to assess that looking at fancy web sites. All advice appreciated. Thanks!

There are quite a few re-builders who post here regularly. If you let us know where you are located, someone may chime in and give you some suggestions. Although it isn't necessary to have the work done by someone locally, it makes it more likely that you'll be able to personally view pianos that have been restored, without having to travel thousands of miles.

Try contacting Rich Galassini at Cunningham Piano. He's in Philly.

My guess is that you can have work done on your piano to improve it's playability and tone, but at over 100 years old the amount of work necessary for a full restoration would exceed the cost of a better new instrument and its potential market value. This is typical of old uprights. However, if the sentimental value is significant and you can afford it then the option is always there.
