The thing is that while these questions may seem silly to musicians who "just do it", we get these things thrown at us in our theory books and can get tangled up before sorting it all out. The minute I read the OP's question I knew what he was half remembering. I remember studying it. Later on I learned that music doesn't always go that way and that often there are easier ways to get at counting than the stiff rules in the books. But to get at that, I had to untangle what I learned before. In all sincerety, 5/8 is taught as 12 123. Maybe "short - long" makes more sense. (?)

Take 5 is definitely 1 2 3 1 2

it depends on where the accents fall in the tune

Yup, one of my favorite pieces in 5/4 time is Mars from Holst's Planet Suite. That is probably 1-2-3 1-2 but counting it actually in 5 works in this piece too.

I think sometimes it depends on the piece but I tend to think 6/8 is more like 1,2,3,4,5,6....like a wave cresting with the 4 as the loudest beat.

I think the OP was answered but as we're here...

The One beat would take the strong accent and the four beat the medium in classical music. Rock or jazz might use a backbeat.

Since we're all enjoying the counter-examples - this morning I was playing "I like to live in America" from West Side Story. That has a feel that is like this:

ONE-two-three-FOUR-five-six ONE-and-TWO-and-THREE-and

Though I should note that the time signature, although it's 6/8 has (3/4) - parentheses are in the score - written in to show that really we're switching back and forth.

it depends if 5/4 is just 5/4 or if it is 3+2 or 2+3, that hindemith drove me crazy last year marking 2+2+3

Unjokingly wink anything other than 2 or 4, it's all about the accents. There are "typicals" but not "always". Usually when I've had to conduct higher beat counts, I conduct to the accent, and not to a traditional pattern. I'll usually cross over to the right on the accented middle beat. This is to help the players feel the subdivision of the measure. Looking at the notes should help you figure this out, but usually there are 2 sub-sections to a 6 bar or 5 bar or 7 or whatever.

play 6/8 in 3/4.

six eighth notes equals to 3 quarter note. so its more easy to count just 123 like a waltz or mazurka.
