I want to play Imagine by John Lennon, but unsure how to play the second part. How do you play the right hand when it shows two treble staffs?

The copy you show is not for piano solo but for accompaniment and singer. Top line is for singer and bottom two for piano.

Generally you can just play the line that is for the singer as if it were written on the same line as the right hand.

Playing from a piano vocal score, such as this, is a bit tricky. In the passage you've posted, the piano part does not include the melody. Unless you're singing, you'll want to play the melody, which is the top line, but you'll also want to play the piano part. You really need to combine the 3 lines. You don't need to play every note in the piano part, just enough to get the feel. Playing from this kind of score just takes time and practice. In the future, look for piano only renditions, if you have trouble combining the three lines.

It's very unusual to see a score
like this with a purely accompanying
piano part. This is the first one
I've ever seen.

For a solo piano version, simply add
the melody notes to the piano part.
This will be just one additional note to
play with the right hand, and
should give a nice full piano
rendition.
